MATCHA LEMONADE 3 WAYS
We started making this matcha lemonade when it was rainy and cold here in NYC, and now that summer is here these drinks are even more refreshing. If you’ve tried our gwell bites, you know we have a love affair with matcha. Since we could all use a bit of love, we decided to share one of our favorite and easiest refreshing summer drinks — matcha lemonade.
Easy - Matcha Lemonade
Ingredients:

1 tsp Matcha
-
1 Lemon
-
1-2 cups Water/Seltzer if you’re fancy!

Ice

Sweetener Options: Maple Syrup, Honey, Date Syrup, Black Sugar Syrup (we stick to liquid sweeteners to ensure it mixes well into this cold drink.
For a single serving:

Boil 1/2 cup of water

Add matcha to a bowl and pour over 1/4 cup of boiling water and whisk until fully combined. It will be frothy at this point. We recommend using and M ow W motion while whisking for the best result.

Add to your cup, mug or jar and set aside to chill

Wash a lemon and zest 1/4 of it. Then cut it in half and squeeze the juice into the jar you have resting with matcha.

Add cold water/seltzer and sweeteners to taste, then top off with ice and the lemon zest to garnish!
Medium - Spiced Matcha Cream Lemonade
We love this anti-inflammatory and soothing take on matcha lemonade. It’s basically an adult creamsicle.Ingredients:

Matcha

Lemons

Water

Ginger Root

Turmeric Root
-
Plant-based milk - we used Ripple unsweetened pea milk
-
Black pepper
-
Ice
-
Sweetener Options: Maple Syrup, Honey, Date Syrup, Black Sugar Syrup (we stick to liquid sweeteners to ensure it mixes well into this cold drink.
If you want to make this easier, you can use ginger and turmeric powder and whisk it in while you whisk the matcha. I like steeping them fresh because the flavor is brighter and pairs perfectly for a summer drink.
For a single serving:

Add 3/4 cup of milk to a pot with desired amounts of turmeric, ginger and black pepper. Bring to a boil and allow to steep for 15 minutes.

Wash a lemon and zest 1/4 of it.

Boil 1/2 cup of water

Add matcha to a bowl and pour over 1/4 cup of boiling water and whisk until fully combined. It will be frothy at this point. We recommend using and M ow W motion while whisking for the best result. Set aside.

Add matcha, juice of x1 lemon, zest of 1 lemon, sweetener (if you want it), and the strained milk (or unstrained if you want it really strong) to a blender and process until smooth and frothy.

Strain and add to a glass filled with ice.
Hard - Matcha Lemonade Parfait
Ingredients:

Matcha
-
Dairy-Free yogurt
-
Lemons
-
Water
-
Lemon Curd - we made our own lemon cream curd, but you can buy this!)

Matcha Jelly - we made our own using hibiscus matcha and kanten (aka agar agar)
-
Kuromitsu (Japanese Black Sugar Syrup)
-
Matcha Gwell Bites
-
Fresh fruit of your choice (We blueberries and blackberries, so we used them)
-
Himalayan sea salt
For a single serving: This one is all about the layering and how adventurous you are with creating your own masterpiece!

Mix 1/4 tsp agar agar with 1/4 cup of water until dissolved. Add it to a small pan and heat until a low boil.

Add 1/2 tsp hibiscus matcha and whisk until well combined. Once combined add a sweetener if desired and turn off heat. Strain into a small dish for jelly to set (refrigerate once set).

Add 1/2 tsp of matcha to 1/2 cup of dairy-free yogurt and mix until well combined. Set aside.

Wash a lemon and zest 1/4 of it.

Crush 1-2 matcha gwell bites and set aside

Wash and dice (if neccessary) your fruit of choice

Now for the fun part! You can start layering your parfait. (if you want the Jelly in the layers vs on top, you will need to cut it first!) Layer the matcha yogurt, gwell bites, lemon curd, and fruits until you are almost to the top of your glass. Then add the Matcha jelly cubes and a bit more fresh fruit.

Pour the Kuromitsu over the finished product and voila! You are done - enjoy!
