BLUEBERRY CHOCOLATE CRUNCH PANCAKES - FEATURING THE BLACK OWNED BREAKFAST BOX
This month we teamed up with Trade Street Jams and Vicky Cakes to bring you the ultimate way to eat good and support black-owned businesses. The Black-Owned Breakfast Box includes the TSJ’s Blueberry Lemon Basil Jam paired with Vicky Cakes Blueberry Pancake & Waffle Mix and Gwell Chocolate Maca Granola Clusters. Plus the TSJ wooden jam spoon.
We of course decided to supercharge this combo the Gwell way. The result, an indulgent, nutrient dense breakfast that is totally insta-worthy!
Here’s how we put it all together.
PANCAKES
Follow the recipe on the back of the Vicky Cakes package.
Tips
Don’t skip the buttermilk step. We used Ripple Pea Milk and added apple cider vinegar.
If you don’t have applesauce or aquafaba, you can also add flax meal or make a flax egg. We added a tbsp of flax meal and 3 tbsp of water to our batter. Let it sit for a few minutes (~5-10)
CHIA PUDDING
We don’t always have syrup on hand, but we love a good topping. If you don’t like chia pudding you can also use yogurt, ice-cream, or whip cream. We left our chia pudding unsweetened and mixed in the TSJ Blueberry Lemon Basil Jam. The best part about this, is that there is no set amount. Mix in as much as you like based on your flavor preference. We knew we would be topping our dish off with a bit more jam, so we didn’t mix as much into the pudding.
PLATING
We tried two options. One is great if you are on-the-go and the other is perfect for a nice breakfast or brunch at home.
Consider the on-the-go version a deconstructed parfait. This would be perfect in a mason jar or a reusable container. We chopped the pancake into bite-sized pieces and layered the ingredients (pancake, chia pudding, bananas, Gwell chocolate maca clusters, and jam).
The at-home version achieves it’s look all thanks to the ingredients themselves. The rich colors and textures of this breakfast treat make for a spectacular presentation layered upon each other.
Tip: Your plate color or design can completely change the vibe. We choose a dark-neutral to keep our breakfast the star of the show.
