Not pretty, but it worked

Sometimes you just need to keep things simple. This breakfast is simple for our family.
This one was about using what we had: canned salmon, mayo, hummus, sourdough, and a few minutes before the morning chaos kicked in.

My toddler had salmon with mayo, grilled cheese on sourdough, blackberries, and a bit of carrot kinpira from the night before. I had the same salmon mixed with hummus and seasonings, spread over toast with cheese. Not pretty, but it worked, and it got us both fed.

How to Adapt This Meal

For extra protein:
Add an egg on top (fried, scrambled, or soft-boiled).
Mix Greek yogurt or silken tofu into the salmon spread for creaminess and extra protein.

For more veggies:
Add cucumber slices, baby spinach, or leftover roasted vegetables on the side.
Stir shredded carrots or zucchini into the hummus mix.

To adjust for allergies or preferences:
Egg-free: keep using hummus or avocado as the binder instead of mayo.
Dairy-free: swap the cheese for dairy-free slices or just skip it , the salmon and hummus combo holds up.
Gluten-free: serve on gluten-free toast, rice cakes, or a baked sweet potato base.

Kid-friendly:
Keep textures simple and separated (grilled cheese, salmon, and fruit apart).
Offer the salmon spread as a dip for toast sticks or crackers.

Balance tip:
This breakfast hits protein, fat, and fiber, a solid start to the day. Add fruit or a small smoothie for hydration and natural sweetness.
