BBQ Phase Dinner
Because toddlers have opinions, and sometimes they win
This one’s the definition of un-aesthetic and simple.
We were deep in my toddler’s BBQ sauce phase, so dinner followed suit: roasted chicken and zucchini tossed in BBQ sauce, baked sweet potatoes, a little rice, and sautéed bok choy on the side.
No plan, just a mix of what everyone would actually eat that night. And honestly, it worked. Sometimes the simplest dinners are the ones that keep the peace (and still taste great).
How to Adapt This Meal
For extra protein:
Add tofu or tempeh with the same BBQ glaze for a plant-based swap.
Mix in chickpeas or lentils with the veggies for added texture.
For more veggies:
Roast carrots, cauliflower, or bell peppers alongside the zucchini.
Add a small salad with a tangy vinaigrette to balance the sweetness of the BBQ sauce.
To adjust for allergies or preferences:
Gluten-free: choose a gluten-free BBQ sauce or make a simple one with tomato paste, apple cider vinegar, and honey or date syrup.
Nightshade-free: swap the sauce for a balsamic glaze or maple-mustard mix.
Lower-sugar: blend your own BBQ base with unsweetened ketchup or puréed roasted peppers.
Kid-friendly:
Serve everything separately so kids can dip, mix, or skip as they want.
Sweet potatoes and rice are always crowd-pleasers; keep them in rotation.
Balance tip:
Between the protein, starches, and greens, this meal hits most of the basics. Add fruit or yogurt after for an easy way to round it out without extra prep.
